    Bob, thanks so much for taking the time to reply! It makes me feel so much better that others have had it rough the first couple weeks. I have a few family members who are doing it and they have more energy than ever so I was feeling quite discouraged!
    I checked in on my carb/sugars using my app Lose it(very similar to carb manager) and I’m getting around 7 carbs and 4g of sugar a day, I could probably cut that down. I also did look and I’m hitting that 70% fat 30% protein so I must just be on my way!
    My aim is totally to lose weight, but also just to feel better. The goal is to lose about 40 lbs over the next however long it takes but in addition feel better, gain muscle. All the good stuff! Seriously thank you!!!

    Welcome aboard Lauren.
    Your still relatively new to the way of eating, even after 3 weeks. The adaptation/transition period, characterized by the unpredictable back and forth between feelings of constipation and diarrhea, and lethargy is typically 3-6 weeks. It was almost 2 months for me. Even then, fat adaptation takes time.
    When I started the carnivore diet I had a broken ankle, so I was sitting around and napping often anyway, so I can't say if I experienced the same thing.
    Carb Manager is a handy app and it is free to download and use on a smart phone (at least on Andriod). You can track your calories (not so important) and macros with it to be sure. You want to aim for 30% calories from protein, 70% calories from fat, and 0% (-ish) calories from carbs. This can be accomplished with a 1g of fat per 1g of protein ratio. 
    Your menu looks alright but I would double check the cottage cheese, cream cheese and homemade buffalo sauce for any hidden carbs or sugars. 
    Congrats on your first 10 lbs. Is it your aim to lose weight?
