You cook and eat this and you will feel like you are completely cheating and totally blowing your Carnivore diet. I was shocked how good this was and the wife, who will not touch a pork skin, loved the whole steak she ate. I pounded the round steak until super thin... 1/4". Then drenched in egg and rolled in crushed pork skins and fried in a skillet. To make the dish completely rounded out, pour some whole cream in a pan, salt and pepper, heat up, pour on steak and it is dang close to Cream Gravy.

Beef smelling and tasting rancid reared its ugly head again for dinner last night. I skillet fried ground beef patties, put on top some bacon and Cheddar cheese. The first bite tasted and smelled like spoiled meat. Haven't had that issue since the first week on Carnivore. I knew it wasn't bad, as the wife had no issue with the smell and taste of hers.... and she is VERY sensitive to anything she thinks might be even a tiny bit spoiled. I didn't breathe out my nose and choked down 2/3'rds of the patty before I couldn't eat any more. Just weird and frustrating...... If all meat and every meal were this way with me, there is no way I could do a Carnivore diet.

Your situation would make it much harder on me. But I guess a person just has to hit a wall to really make a go at Carnivore. My wall was hit a month ago and thankfully the wife was hitting her own wall. We decided to give it a go together, which has been very helpful. I think it comes down to a person's motivations. If you just want to loose a few pounds, I don't think I could do it with Doritos, Vanilla Bean Ice Cream, and an endless supply of Bourbon and Coke waiting for me with a stroll into the kitchen. But my horrible Blood Sugar and Blood Pressure and constant hangovers and the thoughts of my mortality were so overwhelming, I made the change and a house full of crap food wouldn't affect me. I had to decide if I was going to live a good life or continue killing myself. So a non-participating wife would be harder, but I could still do it..... Now, don't ask me how an abscessed tooth will affect me, because I failed with that occurrence.

OMAD for the wife and I.... I had thawed out some Sirloin and today it hit the skillet. I LOVE my Lodge Grill Pan..... Highly recommend and not too pricey.... The little one is for the wife.... bahahhahaha -
Ain't that the gospel truth! Come to think of it, a big reason I love Oysters on the Half Shell is because they went on a cracker with Tabasco, Squeeze of Lemon, Catsup and Horseradish. Without a cracker or Catsup... I probably won't be eating them. Anyway, the wife and I are going to just do 2 drops of Lugol's, twice a week.

I just didn't want another slab of meat on a plate tonight, so I cubed up some of the smoked brisket I had frozen last week and I grilled some boneless chicken thighs and simmered it all in a nice beef broth for about an hour. Just a simple meat/broth soup that is something a little different.

Found this...... Excerpt from the book Folk Medicine by Dr. Jarvis (full text at lugols.com): "In 1829 a French physician named Lugol originated a solution which contains iodine in a solution of potassium iodide. It has been used steadily ever since it was originated. When used to maintain the iodine content of the body the dose is small and is taken only on certain days of the week. When the mineral content of the body is analyzed, only a trace of iodine is found. Ten drops of iodine represent more iodine than is found in the entire body. For this reason, the dose of Lugol's solution of iodine is one or two drops (In this article Dr. Jarvis is speaking about Lugol's Solution 5%. When using Lugol's Solution 2% use 2-3 single drops to get the equivalent), depending on your body weight. If you weigh 150 pounds or less, for example, your dose to maintain the normal iodine content of the body is one drop, taken at one meal on Tuesday and Friday of each week. If you weigh more than 150 pounds, the dose should be two drops instead of one. It is useful to remember that the human body works on the minimum of anything it needs. If there should be a rise in sickness in the area where you live, it would be well to take the Lugol's solution three times a week instead of two, on Monday, Wednesday, and Friday, for the purpose of storing up reserve. How is the drop of the solution to be taken, on the directed days? In general, medical men prescribe iodine to be taken on an empty stomach, preferably 20 minutes before food is taken. During the passing years Vermont folk medicine has worked out a different plan and it is one I like to follow. It has been referred to in another connection elsewhere in this book. To repeat, adding one teaspoonful of apple cider vinegar to a glass of water to make the water acid in reaction, holding the medicine dropper horizontal in order to get a maximum drop, one drop of the Lugol's solution is added to the mixture. The contents are stirred with a spoon and sipped through the course of the meal, as one would drink a cup of coffee or tea."

Like some, I have started consuming Redmond Real Salt. It doesn't include Iodine. I know we need it, but wonder if any is in the meat we eat.... or if we should be supplimenting??? I also have Lugol's Iodine. I just have no idea how much I should be taking, if any at all. This boy don't want no Goiter! hahahhaa

WOW... had no idea a simple post on Carnivore Enchiladas would stir up such passion with all the combative posts. Probably some disrespect, but I have eaten at over 12 Mexican Food restaurants in Wyoming over the years, many touted as the best in the state, but they don't have a clue what real Mexican Food is. You have to get far, far closer to the southern border to understand. So your culinary criticism of my Enchiladas is ignored. You need to take a different tone with folks on here and don't be so confrontational. ....

Food dehydrated bacon

Even better is a massive cookie sheet of bacon, cooking in the oven. We buy thick sliced and it can take up to 60 minutes at 275 degrees. But when it comes out.... oh la la!!!! No mess, no smoke in kitchen..... spectacular! And you don't exceed 300 degrees which ends up providing you with outstanding bacon grease to use down the road. I did try to dehydrate bacon and make it into a jerky..... Not a fan. -

Yeah, that is a tough one. I think if I were single, playing the field, looking for Mrs. Right, I would relax, chill a little and eat KETO on dates. Eat a salad, order a steak and explain you are not eating sugar. That will impress, showing discipline. Besides, she said YES to the invite for a date because she thinks you are cute and likes your personality. .......... -

I can honestly say that I have zero 'fears' regarding my Carnivore Journey. I am a Scientist by University training, so I am approaching this as an experiment. Most formed hypothesis fail, and you take your "learnings" and form a new hypothesis and test it. That's my approach here. But honestly, today is Day#13 and this morning I woke up feeling hungry, but fantastic.

Funny, but when the wife and I conjure up something fancy to prep and cook.... we finish our meal, look at each other and say... "A Ribeye would have been better."

You need to read post #1.... explanation there of how it is all made. The only difference between Carnivore Enchiladas and normal Enchiladas is the corn tortilla delete for the egg crepe.

The only carbs in an enchilada are the tortilla, unless you buy grocery store sauce. Oh no, the sauce is not over-cooked. That's the color of real, dried chilis and the sauce was very "earthy", like I love and can commonly be found in New Mexico restaurants that serve real, authentic food. And no... I was not craving the Carbs. What I crave is that Enchilada Sauce, the peppered ground beef that has Cheddar sprinkled on it. I could have heaped the ground beef on a plate, sprinkled Cheddar and poured that Enchilada Sauce on it and been very, very happy. I just like it rolled in an Egg Crepe and heated in the oven on a plate, as it "eats" like an enchilada.

I greatly appreciate all of your wisdom and experience (you three above). I think you have become experts on your own bodies, a place I hope to get to one of these days. You're also very, very well informed about the current research. Because at the end of the day, everyone is different and we need to find our own paths. ......... -

I agree with you 100%. I just found it interesting that he noted.... Insomnia, low testosterone levels and muscle cramping. If anyone were to ask me what the negatives of Carnivore are for me in my first 2 weeks, those three things would top my list. * The sleep thing is frustrating. Get up three times a night to urinate and then wake up, wide-eyed at 3:30-4am, even on Sunday when I would like to sleep in. (I don't function well with less than 6 hours of sleep.) * Debilitating leg cramps.... even with huge salt consumption and pounding electrolytes. (Eating more salt and trace minerals then ever in my life.) * No sex drive whatsoever the past 10 days. (It was good and I was very active before Carnivore) ........
