I count grams of protein and fat for each meal, and for the day, as opposed to calories.  While we all know that it takes a heck of a lot more than 80 grams of beef to equal 80 grams of actual protein content, we get used to the conversion.  I have never seen the need to convert everything to calories since switching to carnivore.   Now Im curious what others do.

I do not count anything. Carnivore is so simple even a caveman can do it. (See what I did there?[emoji13])
I just eat fat and meat until I’m completely full and I only eat when I’m hungry. The only thing I kept track of was my weight and my measurements. It’s worked well for me and many carnivores before me.
I don’t have much of an analytical mind but for those who do it can be a fun thing to do.
Keep a journal so you can refer to it to help you track trends.
There is no way for any of us to determine your calorie intake. I personally don’t believe in calories because they are only a measurement of something burned and we do not burn our food so I believe it to be a useless metric.
But if you want to measure your food that way you’ll just have to experiment. Set a goal for what you think will be a good starting point, let’s say 1700 calories. Strive for that daily and keep track of what your body does each day in your journal. Adjust from there as you feel you need to.
I think a better metric, if you must crunch numbers, is to eat by weight. 1 gm of fat and 1 gm of protein for every pound of your ideal body weight and then adjust as needed for the results you want.

Ten months I could eat twice as much as I can't eat now. I'm not sure if I was never really that hungry and the cravings and addictions to sugar just made my brail tell me I was still hungry and thus, I kept eating. Or, maybe now after only eating things that truly satiate and leave me full with much lesser amounts, my stomach has shrunk, and I have given myself a natural 'lap band' without the surgery. I don't know. Maybe a combination of the two.

On the days I counted and truly hit 200 grams of protein (1 gram per pound) it included a protein shake. 

Thinking back, I feel like I could have knocked out 200 grams and really wanted to know what was for dessert. (In my mind I would be moving the knife from a normal slice of pie over to a mongo slice). Easy peazy.

One thing that makes Carnivore so attractive is that counting is not needed.  Just eat meat, as much as you want, as often as you want.  The wife and I have found that we actually eat too little.  We sit down to eat and after 1/2 or 2/3rds of our meal, we are stuffed and not hungry.  If there were a reason for us to count, it would be to eat enough, rather than eating too much.  But we just don’t count.

I wonder where the wife and I will be after a year.  I think we will find we just won’t ever eat certain things ever again.  But we will be eating some things that aren’t strict Carnivore….. more KETO.  And if we end up on KETO, will we start counting, attempting to keep our Carbs under 25 grams a day.

That can certainly happen. It happens to many of us. In my case it’s part attitude and part necessity. My attitude is that I don’t want anything in my body that doesn’t provide nutrition and fuel for it. In my mind it’s just a waste of time and stomach space to put fillers in it when I could put real food in it. 
The necessity part comes in because after abstaining from the poisonous non food items my body has lost the tolerance it once had and now those things will cause me to feel sick or cause inflammation. 
I don’t miss any of those items.

Sort of the same boat. 

I am more than likely adapted to not having the plant matter. My best reasoning is that I no longer take gabapentin/neurontin and prednisone for pain and inflammation from my NMO/SD. I had no idea of this as a possibility when I started as this was solely a means to lose weight.

I am sure I could go back to plants here and there and maybe find out which one or ones trigger the inflammation. I'm not sure which one or ones, but I really do not think I need to know nor even want to know. I am not sure if it is just being cautious or being afraid, but my worry would be I find out which one and Carnivore can't fix it the next time. (most auto-immune diseases progress with time)

I don't see me switching back to non-carnivore, and not even in lesser amounts or 'keto'. 

If the question was personal preference, or I like eating vegetables, or I need some variety, or whatever, that would be one thing, but for me personally, it is a different kind of gamble. 

I can't see rolling those dice.

I just ask cuz I know Im at a calorie deficit and Im guessing that has slowed my metabolism so much so that now Im losing weight very slowly. And I want to see if I can speed up the weight lose.  I have my eye on a home gym.

That could be a possibility. Our body’s can think they are in starvation mode and slow down.
It is widely believed that increasing our fat intake can help.
Personally I’m not of fan of trying tricks to kickstart weight loss. I believe in just letting the body do its thing naturally. After all, you are losing weight so what’s the rush? If you are eating properly the just let it ride. This is a marathon, not a race.
Now that’s just how I feel about it and what’s good for me may not be what’s best for thee.
Have you tried a long fast? I’ve seen where that has turned on something in some people to get things moving in the right direction.
Another thing I just thought of is Priming. Have you heard of that? Check out Bella’s video on it and see if it might appeal to you.

Walking is seriously under-rated for weight loss.

Don't be in a hurry losing weight. It's a slow process. Took you years to become over weight, have patience. You wanna get down there healthily. You wanna build muscle, let our body adjust (metabolism).

Remember, too much protein may also stall weight loss. Carnivore should give you more than enough amino acids.
