Weather changing

In my area the birds singing have been replaced by predators squawking. Apple orchards have not been replenished because the essential cold shock taking place annually faded away. Whatever the cause, temperatures are warming enough to melt ice and raise ocean levels encroaching on coastland. Just to mention and not implying it has anything to do with anything... this year the rains have not ended for the season and while dry days have been warm each lingering rain storm has been a cold storm. Here, typically the rains would be warmer than the dry days or at least consistently warm and not significantly cooler. Again, not suggesting "Global Warming" is not happening. It has just bee an unusual last 365 days. This past week was text book perfect weather to me. I like everything green and blooming, cottonball clouds mixed with sinshine making up the ingredients for beautifully dramatic sunsets and sunrises. It ias been on the cooler side. Great for activity outdoors when you otherwise would feel too hot. -
Conspiracies

Many common circumstances involve being conspiratorial. Not to focus on making it the subject to debate but only to cite one example: I was alive when US President John Kennedy was assassinated. A lot has happened and been transparent enough to see that the ideas discussed are not as far-fetched as they once seemed. Generally people were significantly more naive 20, 30, 40+ years ago. But people in key places have been ahead of the public the whole time before and after. I have read many books on the assassination. It has taken a long time to research and publicize events and personal histories of various key figures who might have an interest in participating in such a conspiracy. It is ridiculous (forgive the possible offense) to believe there have not been conspiracies large and. small throughout history. There are typically covert operations taking place on all sides of everything political and economical. It is common for businesses, governments, religious groups and formal organizations, to conspire to promote their positions and carry out agendas. How illogical it would be if everyone operated independently? People organize for a common cause. Growing that base is essential to preserving and sustaining it. One thing that would be helpful is for people to take in information being mindful of the source. Look for the information. Identify and sort out the rhetoric and bias as much as possible. Like don't rely on someone to tell you how to think about the news they are revealing. Make your own assessment and evaluations instead of going to people to feed you theirs. -
Memorable Cooking Disaster

I have had many that are obvious most overcooking for various reasons. On someone else's cook disaster effecting me: Once when the wife took off her eye glasses when preparing dinner I was quite surprised tasting a spoonful of broccoli and clumps of mud in my mouth and instantly spit it out onto my plate. My whole life I have loved bakery goods. If I am sick or sad a pastry makes me feel well again. Somehow a pineapple danish received a pineapple filling with what tasted like they mistakenly grabbed baking power instead of sugar. It was bitter like aspirin or many other things. It was not sugar and it was not toxic I am pretty certain as I did not get sick or an irritation in my mouth. But I was disappointed not being able to enjoy the danish pastry. -
Sorry if it has been mentioned already. Thirst can feel like hunger. When I feel hungry I drink water. It also can change what you crave eating, before and after quenching thirst. Also milk turns to a solid in your stomach and is not the hydrator it might seem to be given its liquid form.

Short Ribs & Pan Glazed Juices _______________________ Pressure cooker (maybe an Insta Pot? I have no experience with them) Pork Short Ribs Water Ghee Salt (optional) _______________________ 1. Cut short ribs into 2 inch x 2-3 inch chunks. 2. For a large pressure cooker melt 1-2 Tablespoons Ghee on medium heat 3. Brown the short rib pieces an at least two sides. Also the edges of large enough. Browning provides flavor and color to the sauce so do not waste this opportunity. Monitor your heat to avoid burning. 4. Once the meat has been browned add 1-2 cups water and deglaze the pan drippings. flip/stir the meat coat it with pan juices. Pay careful attention to the amount of liquid. TIP: With a pressure cooker you dramatically change flavor and consistency when you surpass a percentage of liquid. Even if your target is soup you should pressure cook under the threshold of liquid. Then after to pressure cooking stage add liquid to arrrive at the desired consistency. I cook at lower temperature longer to get away with using less liquid so you avoid running out and burning the drippings before the cooking stage has completed. You do not want more than 3/4 of an inch of liquid when beginning the pressure cooking stage. 5. If you are going to add any salt only sprinkle a small amount over the meat at this stage. It helps bring out flavor during the cooking stage. You would sprinkle salt once cooked. It is not necessary unless you palette is accustomed to salted food. There will be plenty of flavor without it if you are careful to avoid burnig or using too much liquid. 6. Reduce heat to medium low and seal the pressure cooker. 7. On medium low bring up the pressure on medium low heat. Once you hear the steam escaping indicating the pressure has built up* continue to pressure cook 40-50 minutes. Keep your ears open for signs that there is sufficient moisture inside. If the steam release stops or diminishes it is a sign all the liquid has evaporated. It is okay to remove the pot from the heat source and to prepare to release the lid so you can add a little more liquid or check it if not certain. The resume pressure cooking for the remaining time. Also even though I am warning you please don't make the mistake of adding too much liquid. Instead cook carefully with less liquid. This will insure the greatest flavor. Once the pressure is up I reduce the heat so it is just enough to keep the pressurize steam noice going. 8. When the time is up slowly release the pressure allowing the lid to be removed. Do not rush this step. Allow 10 minutes. It is part of the process resulting in tender flavorful results. 9. Once lid is off stir the contents. If there is drippings stuck to the pan add about 1/2 cup of water and deglaze. If there is nothing to deglaze add just enough water so you have a sauce of juices to coat the meat. This pressure cooking process apples to everything whether it is just meat with deglazed pan juices, stew or soup. Whatever the end result is to be, cook with less liquid than add liquid after the pressure cooking stage for the desired consistency. * (This applies when using a pressure cooker. I have no idea what the indicator is if using an Insta Pot)

I am certain that what I understand "grounding" to be works and is beneficial. I just have a hard time getting there. But when I am grounded it is amazing because most of the time I am ungrounded. I suspect lots of people never think about the concept. You do not have to be aware of the word and its meaning. It is one of those things where you feel it anyway. A lot of people a grounded most of the time and just identify the causes for feeling ungrounded using those words. The broad concept of "grounding" in and of itself is not a significant concept to be aware of to those people. Dealing with the momentary causes for becoming ungrounded suits them. I met a woman who had the effect of grounding me. We made a very fast-paced connection and I felt like we had known and trusted one another for a long time. I had briefly interacted with her a few times but we had a chance to connect and time to talk a little riding in an elevator. I could tell she felt the same way. All the indications were evident. It is so rare for me to feel "grounded" I was immediately aware of her effect on me. I wish we could have sustained a friendship but circumstances dramatically changed preventing us from crossing paths and she moved away. Another memorable incident being grounded I had gone on a trip with a small group of people and experienced some emotionally moving events. I learned some things that were life changing. When I returned I felt very grounded because I had sort of aligned myself with my life's purpose. As I was talking about the trip with another group of people I atypically had the crowd in the palm of my hand, so to speak. I am generally a lifetime shy person. I am arguably a good companion one on one. You are all I care about when it is just us. I listen and can really hear what you are saying (comprehend), etc. But is in larger gatherings where I have had a difficult time because I cannot widen my focus and interact with multiple people at once. I have a tendency to block others out when I speak to one in the group. It can be misinterpreted and it can be a problem for everyone so I avoid it. There is a way to address one person in a group and also include everyone else but I have not been able to do that well enough. However, in this case after returning from this life changing trip I had everyone's attention and my jokes had good timing. People commented that I seemed different and a couple said it was because I was grounded. I worked graveyard for 10 years. I got by with very little rest. Initially I felt like I had the flu I was so tired after each shift. Then I acclimated. Eventually I would come alive when I got off work because it was morning and I could enjoy the whole day ahead. Sleep was a last minute inconvenience. I was a walking zombie though. One day after work I took a trip to the coast and when I walked barefoot on the sand I realized how disconnected I was living. It was like the physical world was a couple of rooms away all the time. It was a secluded stretch of coastline I had hiked to where I could observe seals. The only person I encountered was a park ranger in a hurry to get from one end to the other of this miles long beach. So I took a nap on the sand.

Hey Geoff, I also have paroxysmal atrial fibrillation, spinal stenosis (arthritic), a couple of damaged discs, sleep apnea (mild), and I am on Metoprolol. I have wondered whether a carnivore diet would have any effect. You come off as a very interesting man in what you have to say and how you express yourself including your voice. I have not ever seen this Youtube channel. It wasn't until about 35:43 that I realized the host, Dave Mac, had an (Australian? or British?) accent. :-))- 21 replies

That is a great idea for dessert within limitations. I don't drink coffee with sugar, just half & half but I keep thinking about how this would taste without it. With ia sweetener you might get in the ice cream range with a different texture. You could also steer into caramel/butterscotch territory implementing butter. -
poll White or Dark meat?

I like dark meat of turkey the most but white is really good when dipped in gravy. Well I just learned that duck has white meat. Funny I used to think I was relatively smarter than average but I have been surprised at not picking up on some things along the way in my life so more frequently than not I probably seem dumb to people because I tend to think I don't know a lot for certain. I heard duck has no white meat. That was stated somewhere around me, perhaps on a relatively reliable source like Julia Child's show of all cooking shows to be stated on and not just obvious hearsay. I don't recall that it was definitely there though. I never desired or had an opportunity to eat duck and did not have my "radar" attuned to duck aside from how cool looking and sounding of a bird I consider them to be. Duck first and foremost to me makes me recall that when my mother was a young girl her and her brother had pet ducks. One day they noticed they were missing. They learned that their mother had fed them to them. I say never ever give a child a pet they may one day have to eat. Sad and horrifying but your own upbringing and times you grew up in factor into the equation. The mother lived a hard life and raised two kids during most of their childhood by herself. -
I am experimenting with a carnivore diet. Initially, I planned a 6 month trial. Since I began it has become a 1 month trial. I will most likely make it 6 months to see the effect. I have achieved cognitive benefits from a diet regimen in the past. However, I have not had it in me to go that route recently. I have been eating for comfort. I am also now on a medication which has weight gain as a side effect. I have not been inspired enough to give up what I get out of the comfort food. I have loved bakery desserts all of my life. Fortunately I had a metabolism that enabled me to eat anything and all that I wanted. I am not even pre-diabetic but I am curious to see how it feels to eliminate sugar. A few years ago I stumbled upon a book about something else but it happened to elaborate on diet, the evolution of mankind and how there is obesity where people are staving. I am curious to see how it feels to live on a carnivore diet. I like to eat and at times I have spent a lot of time experimenting with recipes and cooking. Out of necessity I was tired of the ways I have to prepare meats and thought of making soups. I ended up improving my soup making method after a few attempts and now think of soup as something very atypical of my limited menu. I anticipate discovering many things along the way as I work with a limited diet. Please call me Meat

Swearing on TV

I have seen it work on screen and read it in books where the context fit the moment or the person but when it is tossed around like salting the table and floor while salting french fries it just stinks up a place. There was a western on HBO years ago and it seemed that the producers used swearing more than anything to convey how rough and cruel things really were in those days compared to countless westerns produced previously. To me it was definitely over the top. However, even though he never really swore John Wayne as Rooster Cogburn could have sworn and it would have practically been gratifying because John Wayne in that role said everything with gusto. Ironically the manner in which Jeff Bridges portrayed Rooster Cogburn was the polar opposite. Everything his version said was fingernails on a chalkboard to me. Podcasting has loose boundaries. Depending on the show it is common for people to toss F-bombs. And they do it during an otherwise regular conversation, swearing just because they can in a podcast while the older enough to know people listening are used to not hearing it in a broadcast. Good hygiene comes in many forms. Courtesy, consideration, compassion, empathy, generosity, and general care for all life and the world we share has a good hygiene. -
Hello Bob, Aside from ketosis interruption many things account for at least 3 pounds of daily variation. So we're really looking at maybe 1-2 pounds gained as a consequence of drinking 2 beers. The moon effects ocean tides and the water portion of our bodies. Aside from the vehicle of delivery, in this case the ingredients which make up beer, alcohol can have an influence on efficient digestion and sleep. Sleep alone can make a difference on weight gaining, retaining or losing a few pounds overnight. You can gain weight being active yet lose weight merely sleeping well. When you are not well rested your body sort of believes it needs to help you survive and holds onto everything. A big eye opener to me was realizing that you also need to do nothing to lose weight, and to be healthy, happy and productive.

Hey Folks! Basic Chicken Soup: 1 Serving will be about 3.5 cups INGREDIENTS: 1.5 Cups finely chopped pre-cooked chicken per serving 2 Cups water per serving A dab of Ghee (enough to stir-fry a portion of the chicken in a pan or soup pot) ______________________________________________________________________ What is a pot but a frying pan with walls to keep the splatter from messing up the stove? I rarely use pans. Plus pots always have matching lids. You can fry in a separate pan then combine everything in a pot. I prefer to do it all in a pot. If you do fry in a separate pan be sure to deglaze the pan and add that solution to the combined mixture. ______________________________________________________________________ I can easily consume 2 servings of this. It is surprisingly flavorful. It is also something very different than frying, grilling or baking meat which I sometimes get tired of, mostly because preparations of meat tend to seem greasy and fatty when meat dominates your diet and there is significantly less variety in meals, not using any vegetable or carb products. ______________________________________________________________________ DIRECTIONS: 1. Cook the chicken in advance. I use a rotisserie chicken from Costco. You can work from raw chicken of any source of course. I recommend baked but however it is cooked don't crisp it from flame of fry pan. The bulk of your chicken should be cooked from indirect heat like hot air or steamed. You can fry it but do most of the cooking by covering the pan with a lid and steaming it under low heat. Avoid overcooking it. 2. Using Ghee, lightly brown 1/2 cup per serving of chopped pre-cooked chicken. 2. Add 2 cups water per serving. 3. Heat this to serving temperature. 4. Chop up pre-cooked chicken to form 1 cup. 5. If it is cold, heat the cup per person of chopped chicken in microwave for 1-1.5 minutes. You want it heated but not so much to cook it. 6. Add this heated chopped chicken to the existing browned chicken and water mixture. It is ready to serve. You could add salt to taste. I do not think it needs added salt. I find that the browning a portion of the chicken in Ghee provides plenty of salted flavor. ______________________________________________________________________ * THE TIP: Only use a small portion of the chicken to flavor the water. What you need to avoid is overcooking all the chicken. Somehow meat cooked too much in liquid is dry and tough even though it has cooked in liquid. The microwaved chicken will be warm and tender. Only the portion of the chicken which was browned will be cooked more. This way you end up with mostly tender moist meat with accents of browned meat adding interesting texture and flavor. What you will avoid is that dry tough meat consistency which comes from overcooking meat in liquid.
