Ultra-Processed Diet Leaves a Blood Signature Linked to Heart Disease and Diabetes

Researchers at UCL and Imperial looked at about 6,000 adults, followed for up to 20 years. They identified different blood patterns associated with ultra-processed and minimally processed diets.
The ultra-processed pattern included lower omega-3s and HDL, and higher VLDL triglycerides. People in the highest third for ultra-processed food intake had a 17% higher risk of cardiovascular disease than those in the lowest third.
Those eating the most minimally processed food had 19% lower cardiovascular disease risk and 40% lower type 2 diabetes risk than those eating the least.
This was observational, so it doesn't prove processing caused those outcomes. It also wasn't a carnivore study. But the differences showed up in blood measurements, not just a food questionnaire.
Anybody here see their triglycerides, HDL or A1c change after cutting out packaged food? What changed first?

When the studies say 'observational' or 'surveyed' I lose interest and a lot of times stop reading at that point. I like data, actual data, and how it speaks to certain issues.
I think observational and surveyed studies fall into one half of 'causation and correlation' and in that half it is a lot of assumptions and speculations.
And at the same time, I factor how I feel and how I am doing and will rank that above any data that says my strict carnivore, primarily red meat, salt and water will have adverse effects at some point.

That's a fair challenge, Bob. I should have been more specific about the research I was referring to.
One paper worth looking at is the systematic review and dose-response meta-analysis published in the Annals of Oncology in 2017, titled "Foods and beverages and colorectal cancer risk." It analyzed prospective studies and reported an approximately 12% increase in relative colorectal cancer risk for each additional 100 g per day of combined red and processed meat consumption.
There is also an important distinction between the two types of meat. The WHO/IARC assessment estimated an 18% increase in relative colorectal cancer risk for every 50 g of processed meat consumed daily. For red meat, the estimate was 17% per additional 100 g daily, but WHO made clear that this estimate was conditional on the association being causal.
I also found the World Cancer Research Fund's evidence review, which explains the difference in the strength of evidence for red and processed meat.
I agree that these findings need to be interpreted carefully. These are observational data, not proof that eating a particular portion of fresh beef will cause cancer in an individual. Relative risk also isn't the same as absolute risk.
So I wouldn't say that portion size establishes a precise safe or unsafe threshold. My point was that habitual intake and the distinction between fresh and processed meat are relevant when evaluating the available evidence.
I appreciate you asking for specific papers. It's a much better discussion when we can look at the actual numbers and limitations rather than relying on headlines or general statements.

That's a fair question, and I appreciate the opportunity to clarify what I meant. I was referring to published research and clinical guidance rather than making claims based only on personal experience.
I found two resources particularly relevant to this discussion. The NIDDK dietary guidance on fatty liver disease explains how different dietary factors, including saturated fats, added sugars and overall food choices, can influence liver health.
I also looked at the 2024 EASL clinical guidelines on MASLD, which discuss dietary quality, lifestyle changes and the evidence behind different nutritional approaches.
I think ketogenic diets deserve serious discussion, particularly because reducing carbohydrate intake may improve certain metabolic markers and liver fat in some people. At the same time, I agree that we should distinguish between evidence for ketogenic diets and evidence for a strict carnivore diet. They aren't interchangeable, and more long-term research specifically on carnivore diets would be valuable.
I'm not suggesting that one dietary approach works for everyone. I think looking at actual outcomes, including liver fat, liver enzymes, insulin sensitivity and other metabolic markers, gives us a much more useful discussion than relying on dietary labels alone.
