  1. FYI - Instant coffee supposedly has a lot more oxalates than regular brewed coffee. I've seen that on several high oxalate food list on the web. Thought I mention that in case oxalates are a concern for you.
  2. If I add allulose, I just add it to taste. For 2 cups of cream it would probably be 1/4 - 1/3 cup of allulose. It's not that sweet but helps with the texture and freezability
  3. I tried other sweeteners but allulose really works well for an ice cream. Years ago I picked up a package of reusable plastic ice cream "push-up" molds. Those are great for portion control. I think they hold 3 oz max, but you can of course fill them with less. That's much better than sitting down with a mason jar full of ice cream and a spoon - TRUST ME! I know how that turns out. For me that's like saying "Well, I'll have just one slice of pizza" 🤣
  4. Night shifts are sometimes killers for a healthy eating plans. Pre-Carnivore I worked 2nd shift for 30+ years and coming home from work was like a free license to eat another supper @ midnight. I've learned so much from the Carni community and you will also. Research and read as much as you can and it will just become your way of life. Good luck to you. Also if you can throw in a short extended fast once in a while, that is a big help for health. Start slow and work your way up to longer durations.
  5. Heavy cream, a few eggs yolks, a pinch of salt and maybe a splash of vanilla is all you need. If you want to add a sweetener I would suggest allulose because it keeps the ice cream from turning rock hard in the freezer.
  6. I choose an 8" Mercer brand. highly rated on youtube and it had the features I was looking for. Amazon just dropped it off and it's nicely made for $38. Now we see how long the edge holds 😀. Sharpening is not an issue here. I have a Tormek and a CBN wheel for any needed touch-ups. For daily honing I have a steel and a leather strop. Now it's time to smoke a brisket and test this new knife out. Too bad i'm on an extended fast right now.
  7. That's great to hear of your success. Spondy can be worse than my MS some days. Eating carny has helped it a lot but I'm still working on my symptoms.

  10. I'm in the market for a GOOD 8" chef's knife and looking for recommendations. It needs to be something that will hold an edge for a while. I'm currently using a Victorinox which is cheap and okay but it doesn't hold an edge for very long. Budget can't go too crazy on this purchase. I still need money for meat to cut with it 😆
  11. Too many variables to be accurate over just a 24 hour period. You would be better to track over a few weeks and then divide by the number of days. I rarely weigh myself and just go by how my clothes fit. Currently I'm at 160.1 and headed for a final goal around 150. When I get there, I get there. I think it's more about how you feel then what you weigh.
  12. My screen went into "Dark Mode" which is perfect. Not sure if that was the reason but I love it. Dark mode is easier on the old eyes.
  13. I fast for helping to treat/eliminate my MS and ankylosing spondylitis. Fasting along with a Carnivore diet have made huge improvements in my life. The energy I develop during a fast is extraordinary. I feel my best while fasting for sure! It's surreal to me with the effect it has. As soon as all our leftovers of "Carni-chow" are used up I'm starting another long fast. Might try for a 100 hours "Century fast" this time. My body will let me know how long to go.
  14. 24 hour dry brined Pseudo ribeyes for lunch today. I just cut a rump roast in half for 2 nice 2" thick steaks. Not as tender as ribeye but very tasty.
  15. We always try and find any clearance meat deals and either cook it up right away or freeze it. Never had an issue. Sometimes we can get up to 60% off @ Wally World, And YES, There is nothing wrong with meat from Walmart, other than their high original pricing, because That is not a bargain in our area. Our best find ever was an 11 1/2 pound brisket for $6.63 total. That's what they tagged it at, so we bought it and it was one of the best tasting briskets ever. Now i always check all the briskets looking for another "once in a lifetime" find 🤣
  16. I do not have a gallbladder either. Removed in 1983 at the age of 22. My doctor at the time thought it was strange for someone so young. After the removal I dealt with diarrhea after eating greasy foods. That lasted for several years and then slowly went away. now my digestion seems to work just fine. Never constipated on Carnivore. Make sure you are getting plenty of animal fat, plus magnesium. Magnesium citrate will work for sure. I will say I was a little backed up about 3 weeks ago BUT that was do to my consumption of some cough syrup and about a dozen sugar free cough drops over a 3 day period. After I dropped the meds everything went back to normal. I found that strange how cough meds affected my system now being a carnivore.
  17. I used to burn in about an hours worth of Wisconsin summer sun but not anymore. Carny fix that for me. my wife noticed the same effect. I wouldn't use any sunblock now anyways due to all the bad chemicals contained within.
  18. Come and jump back on the wagon. There's plenty of room. I fell off and had a burrito the other day and the next morning I started right up again with a plate of bacon and eggs. All is good now.
  19. You sound like my mom when I was a kid 😁. I was never exposed to that style of nose to tail eating. We had a family pig roast when I was about 5 or 6 and I saw my uncle eat pig brains. Me and my cousins were all freaked out. That's a memory that sticks with a person forever. I can picture that like it happened today and it was almost 60 years ago 🤣. If I ever find affordable ox tails, I would like to try that.
  20. We went for a food run this morning to our local store. I found quite a few packs of clearance round steak Which Is marinating right now for jerky tomorrow. 3 lbs. ground beef chubs were BOGO for half off, so I'm turning that into dog food for our Gemma. She also gets Hard boiled eggs, peas, carrots and sweet potato. I add calcium powder to her food also. grabbed a few rump roasts also for the freezer. ALL that meat and it is still cheaper than a SAD diet!

  24. I've found that I can't eat the "comfortably stuffed" (As Dr Berry would say) portions anymore. I do get plenty of fat though using bacon grease and butter, also coconut oil cubes that I keep in the freezer work well, especially for ketone production. The MCT's from coconut oil are supposed to go straight to the brain.
  25. For myself after all this carny time I no longer try to "eat till stuffed". I now just do a nice OMAD around 1pm, and maybe some beef jerky or pork rinds around 5pm or 6pm and thats it on a typical day. If we do like big ribeyes or something really tasty for a meal and I eat too much Then I feel uncomfortable all night long. I'm now getting closer to my current goal weight and do not require so much food anymore. once I reach the current goal of 150 pounds total body weight I will then reevaluate how I feel and maybe set a new goal of 145. To me it's amazing how well you can feel and survive on so little food when you are eating quality nutrition without all the crap foods.
