Found this in the comment section of a carnivore youtube video. (Didn't save the username unfortunately.)

" make a similar "gravy" for my eggs, I fry 2 eggs in a good amt of butter, sunny side up, plate into a warm bowl, while the butter is still hot, add about 2 TBL of cream cheese, Whisk a bit then add H&H or heavy cream, very slowly, add pepper, shake in parmesan cheese to taste, spoon over eggs. Use amt of cream, pepper, crm cheese you like for the amt of gravy you need. I also use this gravy over my meats. it is delicious in flavor and FAT. your kidddos are growing so much, good to see them in your videos . keep styling and smiling!"

Here is my version...
1 stick of salted butter(add salt to taste if unsalted)
2 tablespoons of cream cheese
1/4th C of whole milk(all I had on hand, feel free to use fattier milk/cream)
1 tablespoon of parmesan cheese(optional)

Melt the butter on low heat, add the cream cheese and whisk. Do not be alarmed if it separates. Add milk/cream and whisk until combined. Grate some parmesan into the mix while still hot. Whisk it while it cools to make sure it doesn't separate. Serve warm.

Feel free to use less butter and more parmesan, I went slightly overkill with the butter but it turned out delicious so I decided to keep it. Also if you need to reheat it as leftovers you will have to add more milk and whisk it back together.
