I just didn't want another slab of meat on a plate tonight, so I cubed up some of the smoked brisket I had frozen last week and I grilled some boneless chicken thighs and simmered it all in a nice beef broth for about an hour.  Just a simple meat/broth soup that is something a little different.

Dang that looks amazing!  I can smell that brisket from HERE!

It is amazing how we truly do have the best diet in the world, yet can still so easily slip into the mundane "ho hum, guess Ill eat another steak tonight" mentality.

Thank you for the encouragement to change it up a little!!

I was thinking the same. Coming out of a crock pot I guess I never considered it a 'soup'. 
I use the crock pot quite a bit when on a long work stretch. It is just super convenient.
Dump it all in and when I come back hours late the 'magic' has already happened.

Oh yea. That meat is so tender you can just shred it up for a soup or chunk it for more of a stew.
