I am 6’7”, 340 lbs, 47 year old male. Just starting carnivore and looking for recommendations on what my fat/protein intake should be. Going 1/1 grams right now. But I am literally 2 days in.

You're a big ol boy aren’t you. 
To find out what the best fat to protein ratio for yourself is to  start with about 70% fat and 30% protein in terms of calories. In terms of weight, this is approximately 1:1 ratio.

To calculate protein needs, one should aim for approximately 1 gram to 1.2 grams of protein per pound of lean body mass. This approach is suitable for individuals seeking to maintain or gain weight and muscle mass. Protein requirements may vary based on factors such as age, activity level, and individual metabolic health.

Welcome and congrats on getting started.

I was 306 when I started and jut recently starting counting protein grams per day. After just about 9 months it is really hard for me to eat enough to get to 200 grams of protein in a day. Tonight, I ate a pretty big NY strip steak that was about 14oz which is around 90 grams but that is the only thing I ate today. I ate twice yesterday, and the second meal felt like I was having to choke it down. 

Tonight, I hit the 90lb loss mark. I'm trying to hit the 1 gram per pound of ideal body weight in order to gain some muscle. I'm finding it difficult to eat that much in a day.
