I like this method. It's easy to get a controlled medium/rare roast or steak. This time I let the meat cool down in snow after bath, so it did not get any more done when I seared it on a very hot cast iron pan. Eight hours / 133 F.

For some reason, I am unable to edit the main page anymore, which is why the livestream advert in the upper right is still displaying an ad for a Monday back in January. At the same time, I am unable to run the upgrade process from within the software to fetch and install the next update. So, sometime in the next week or so, I will be creating a backup of the database and completely erasing the site and uploading a fresh copy. We will likely be offline for about 30 minutes when that happens. I will post an announcement before we go offline to perform the upgrade manually.
