  2. This week has been rather repetitive. I buy eggs and NY strips in bulk, and the wife is refusing steak, lol. So literally every day I have had eggs and sauage for breakfast, and a NY Strip for dinner. I've been skipping lunch or just having a beef stick to hold me over, which is basically the pattern I had when I lost a bunch of weight while my ankle was broken. I'm 5 lbs down as of this morning, at 172, which is officially 60 lbs down now and the lowest I have seen on the scale.

  5. Hey @Kyle Katarn! I was curious how things are going for you? Your last major step would be to eliminate the bread altogether. Then you would be avoiding the unholy trinity of grains, refined sugars, and seed oils - the trifecta of disease and death, lol.

  7. My local meat store, Duma's Meats, sells just about everything. I picked up these shaved ribeye slices that were like 1/4" each, and for some reason cheaper than the usual ribeye. I fried them up in butter with a little seasoning to the point where they had a little crisp to them and they were fantastic. Not quite as thin/shaved as a philly steak, but too thin to cook "medium" or leave any pink at all.
  8. Isn't it frustrating? There's so many of us UC sufferers that either calmed our symptoms, cured them, or put them into remission with changes to our diet, and they will still insist that diet has nothing to do with it. I used to mock those that though the food and pharmaceutical industries wanted to keep you fat and sick and called them conspiracy theorists. But after years and years of being let down by the medical system and having to do my own research and be my own advocate, I'm now proudly one of these outspoken "conspiracy theorists" myself, lol Awesome! Here's a belated "welcome aboard"! I've had a busy week

  13. I got these beef sausage links (in bulk from Sam's) that is replacing my pork sausage for now while I work on getting my phosphorous levels down. Had that with 5 eggs this morning, and I have a 20oz thick cut NY Strip waiting on standby for dinner tonight
  14. How much are you eating? Are you eating until you are comfortably stuffed? Or are you portion controlling? Are you intermittent fasting or eating OMAD? Another point to consider is the fat content? Are you eating lean meats or fatty meat? Are you cooking in butter, ghee, or tallow? Are you saving the grease with your ground beef or are you draining/rinsing it?

  16. I would lean towards oxalate dumping as well. I just looked over your post history. You started carnivore around mid-September, about 6 weeks ago. So, if you were going to start experiencing oxylate dumping, the timing is about right. I would also stretch, do some walking or working out, etc. OR, if you have been doing this, maybe you feel sore as a result and just need to rest up for a day or two.
  17. We're here to help. My first bit of advice is while I can appreciate wanted to put things to "a screeching halt", this can be easier said that done and you might slip and have a sip now and again, and IF you do, do not let that derail you. Don't beat yourself up, and don't give up and go off the rails for the rest of the day. It's not the occasional giving into temptation that sabotages your efforts. It is the "I'll start again tomorrow (or Monday, or next week, or January 1st, etc)" that gets you. If you give into temptation, you get right back up on your feet that very instant - and resolve to be "on plan" for your very next meal or decision.
  18. I've dabbled in a little raw here and there. Not a whole meal, but a pinch of this or that while I'm preparing/seasoning things to get them ready to cook.
  19. Thank you w1zxjr I've reversed everything except for my CKD and hypertriglyceridemia, which is a consequence of the CKD. I've never checked my thyroid. I should just for the sake of it. I'm making a handful of changes and hope to see some improvement, even if it's just a return to the Cystatin C level I had previously.
  20. I had a cold that started coming on Tuesday night. Friday and Saturday were the worst. Cough that burned my chest. I thought it was going to become bronchitis. Yesterday I started feeling better and I am mostly back to normal today with just some residual mucus to get out of me. But I am no longer contagious so I won't get anyone sick on the Zoom call tonight, lol

  23. Unfortunately, yes I do, but it's because of my kidney disease. But if my kidneys were in proper working order I imagine I could do just fine without them.
  24. This is actually the accomplishment that I am most proud of. The one thing that was destroying my life that I did completely resolve. Cured the "incurable". And then the views are "meh", lol. My deteriorating health all goes back to coffee. Coffee -> Colitis -> Mesalamine (prescription drug) -> Mesalamine destroys kidneys -> Stage 4CKD -> High triglycerides -> Niacin (for trigs) -> Rhabdomyolisis (from Niacin)-> inching closer to stage 5 CKD. Kinda sucks.
