Also I adore nachos but discovered that I have a very bad reaction to chili powder.

You can still have nachos. Just use pork rinds and cheese with some kind of meat. You don’t need the chili powder.  Heck, I’ll even use jalapeños occasionally.

My foodie pix don't appear to be attaching to my post. 😭

Some of these I made a few years ago, some are recent. I drink raw milk, I ferment my own kefir milk, I also sell raw kefir grains. If you have any questions, please ask! The pic of the Carnizza, was the very first one I ever made and I wish I remembered how to make that specific one because I saw fireworks!

The pic of the Carnizza, was the very first one I ever made (2019ish) and I wish I remembered how to make that specific one because I saw fireworks! There's no red sauce in sure I used homemade Alfredo, the red is pepperoni. Oh and I enjoy icy clam juice during the warmer months. The purplish-white stuff is blueberry goat cheese and the dish with what appears to be cottage cheese is what kefir grains look like for fermenting milk. 💜

Have you experimented with converting the egg wraps to "pasta" noodles?

Yes I have. They weren’t bad but nothing I’d go out of my way to do again.

Yesterday we went to Texas Roadhouse and I got the sirloin and shrimp combo. The 8oz sirloin was cooked to perfection, totally moist and melted in my mouth. I may cook a good steak, but not this good. I needz to know their secrets, lol.

Store bought sauerkraut or homemade?

Store bought for now. I have made my own sometimes, too.

We have a very good sauerkraut ( and Kimchi ) manufacturer here. No additives or preservatives, not pasteurised. Just cabbage, carrot and sea salt.

My humble guess would be Sous Vide. Nearly all beef houses use it for perfect, repeatable results.

I did SV pork ribs today.

Boiled Bratwurst dinner.

Also some sauerkraut - I take a spoonful of sauerkraut every day except when fasting. It may or may not be helpful with gut health. Probiotics.

Mustard and ketchup are tasty here, I make my own so no added sugar. I  use them seldom and sparingly.

If you must eat vegetables, fermented is the way to go. And sauerkraut is delicious, so there.

Forgot pics again. Thursday night was a 14oz NY strip. Friday morning was 4 eggs and a two beef riblets, two more riblets at lunch and then another 12-14oz ribeye when I got to work. This morning 4 more eggs and then 5 chicken tenderloin strips mid-afternoon followed by another 12-14oz. NY strip when I got to work tonight.

We are cooking butts and shoulders tomorrow. I will try to get some pics.
