Had an amazing Easter weekend. I turned 50, I ate cheesecake. Ice cream. I felt a rush of sugar, crashed hard. I great reminder, now back to my normal, carnivore. I could not stop thinking, I feel better turning 50 then turning 40. The power of the diet.

Congrats on the 50. I always heard about "50" but for me, the wheels fell off at 49. Congrats and respect for the ability to stray off carnivore and then come back. I am almost sure I can as I had a couple slip ups and for me, the best case scenario happened, they simply didn't taste as good as I remembered. Or maybe the carnivore side of my brain won out, not sure. Either way, congrats.

Heavy cream, a few eggs yolks, a pinch of salt and maybe a splash of vanilla is all you need. If you want to add a sweetener I would suggest allulose because it keeps the ice cream from turning rock hard in the freezer.

Thanks for tips. I'm getting low on allulose; just bought a "big" bag of monk fruit (900 servings).

I tried other sweeteners but allulose really works well for an ice cream. Years ago I picked up a package of reusable plastic ice cream "push-up" molds. Those are great for portion control. I think they hold 3 oz max, but you can of course fill them with less. That's much better than sitting down with a mason jar full of ice cream and a spoon - TRUST ME! I know how that turns out. For me that's like saying "Well, I'll have just one slice of pizza" 🤣

If I add allulose, I just add it to taste. For 2 cups of cream it would probably be 1/4 - 1/3 cup of allulose. It's not that sweet but helps with the texture and freezability

I suspect that allulose I've been adding might also be contributing to mine unless I'm making my instant coffee too strong, or a combination of both.
Monk fruit arrived today. Will test tomorrow in place of allulose.

FYI - Instant coffee supposedly has a lot more oxalates than regular brewed coffee. I've seen that on several high oxalate food list on the web. Thought I mention that in case oxalates are a concern for you.

I have gone through two rounds of calcium/oxalate kidney stones. one had to be surgically removed, so I will not consume any medium or high oxalate foods. Another great reason to eat meat! ZERO oxalates from meat.

If you watch your consumption of other high oxalate foods I'm sure you will be fine. Eating calcium rich foods like eggs will help because some the oxalates in your system will bind to the calcium and be excreted through "the back door". You DO NOT EVER want kidney stones, that I can guarantee you! I've been through several episodes of body pain in my life including a broken femur and gallstones and by FAR the WORST was kidney stones!

I agree with this. I still drink black tea.

I am actually surprised I never had kidney stones. I would drink a pot of coffee per day, snack on almonds like most people snack on Cheetos, and eat spinach at both lunch and dinner. I could have been rename Mr. Oxylate, lol :D

I'm sure I gave myself the kidney stones by listening to the influencers of the day (10 yrs ago) while eating a SAD diet. I would down huge spinach salads, handfuls of almonds and beets, all in the name of eating healthy 😂. That advice was nothing but a big crock full of sh%t. Since then I have done my research and found actual science based nutrition advice by influencers who use actual results in their findings. That along with my own health results from 4 yrs of Carnivore have shown me a better way of getting my nutrition. I'm not planning on EVER changing the way I now eat. I also do NOT follow any influencer's who sell their own line of supplements. They just want your money and probably do not care how it turns out for you yourself!
