Welcome to our group Aesop. 
Your cravings are your body telling you that you need more fat. You’ve burned up your glycogen stores and now need more fat for fuel. Don’t be afraid to feed the beast.

I had been having about 150- 200g per day of grasfed organic butter. Ive also put on about 8kgs since starting just over a month ago so it's quite overwhelming.

Have cut back on the bitter to see if I go back to my normal comfortable weight. I'm doing caenivore for healing inflammation , gut issues and brain injury

I think your weight will even back out since you've just started, just keep on tweaking your ratios. Healing is the priority here, weight loss/gain is secondary. Consider also your body composition, when considering weight. Good luck to you.

Dairy can put weight on. Now I’ve heard that butter, even though it’s a dairy supposedly doesn’t fall into that category but I’m not convinced of that because over doing anything can cause setbacks. So I do think you should cut back the butter but keep up your animal fats and protein. In Dr. Bakers book The Carnivore Diet he stated that if you are still hungry then eat. Just make sure it’s fatty meat. 
We all have a different metabolism and some can be satisfied with just a pound of meat but I’ve seen Dr. Bakers knock off a 4 pound chunk of steak like it was nothing and he regularly eats 2 pounds of steak at each meal but he has a high metabolism and that’s what it takes to satisfy him. 
You'll just need to use a little trial and error to see what works best for you. Keep a journal detailing what you are eating and see how things are affecting you. Try something and then monitor what your body does over the next three days. No change then try something else but each time give it three to five days to work if fail and keep track. Eventually you find your path.
