I was just looking over my blood labs history, and my total cholesterol and LDL went way up during my weight loss, but now that I have been weight stable for over a year, both my total cholesterol and LDL have dropped down significantly. All this lends to what I read before, that cholesterol, including LDL, is stored in adipose tissue and gets released into the bloodstream as you dissolve fat.

  4. Welcome Gabe. For those reading, I've known Gabe online for probably 10-15 years now. The carnivore diet can help you reverse your diabetes and a number of other chronic issues. It's an all meat diet (with some allowance for cheese and butter). You may want to transition into it gradually, as any sudden shift in dietary habits will throw your body for a loop. You can do it cold turkey if you like, but be prepared for 1-3 weeks of the "keto flu" as they call it. For starters, eliminate all grain (wheat, bread, crackers, corn, oats, rice, etc), refined sugar (white, brown, powdered, syrups and sugar alcohols, etc), and vegetable seed oils (safflower, canola, sunflower, corn, rice, peanut, etc). You can have fruits and vegetables in the beginning. You can use butter, ghee, tallow, lard, olive oil, coconut oil, and avocado oil, with a focus on the animal fats. You want at least half your plate filled with fatty red meat, fatty, fish, or eggs, and the other half can be low carb veggies - for now. Eventually you will decrease the veg portion until they are all gone for good. Have you had your A1C checked lately? Or how about a Renal Panel? Tell us about your insulin and other meds. Some medications you need to wean off slowly and not just stop taking abruptly, so we want to know what they are and why they were prescribed before suggesting you to stop taking any of them.

  6. I'm currently listening to "The Great Cholesterol Myth" in Audible. It's a fantastic publication, and would address your concerns.   9. Awesome! Welcome aboard! I look forward to hearing about your results. I would think you should see improvements in both. Inflammation should go down. And for me and many others, our brain fog lifted and we can continue to think pretty clearly unless we deviate from the diet. Welcome to the new normal. Seriously, don't get to concerned about this. On carnivore, you will poop less. Almost every part of the animal products you consume are digested and used by the body. The vitamins, minerals, fat, and the protein. There is very little waste. I go on average of 2 or 3 times a week now. During the transition phase, it's definitely alarming because you are probably used to going at least once, maybe even more, each day. For my first 3-4 weeks, my bowels were unpredictable. It would either be solid gravel, or liquid explosion. But I even went 9 full days without having to go. I would even have these phantom urges to go sit down and then nothing would happen. This is common, especially if you didn't slowly wean yourself into the diet but switched rather abruptly. Everything will still work, and things will return to your "new normal" before long.

  13. Yes. Chicken is still nutritious and those burger patties/ground beef is still red ruminant meat. There really is no "calculation". Obese individuals are admonished to eat until they are comfortably full, with no snacking. Oftentimes it is easier for them to eat one meal a day, because they are (1) less active while overweight, and (2) using their own fat stores for fuel. Their big bellies are like reservoirs of tallow that they can tap into at any time. But the closer you get to an ideal weight or the more active you are, the more frequent hunger you may feel. Once you start "calculating" then your entering into CICO territory. Whenever you want to go down this route. While it's true that calories don't matter, it still provides a useful metric for how much you are eating, just like measuring and weighing your food would. A prolonged calorie deficit will eventually slow your metabolism. The body is smart, and will adapt. That is entirely up to you. A clean keto diet that is mostly meat with some low carb veggies on the side is still a proper human diet. The calculations would be the same. Keep the carbs as low as possible. Eat only when you are actually hungry. Don't snack.
  14. My first time cooking in my cast iron pan I burnt everthing. It holds way more head than my teflon pans. I have to cook steak on 9+ or HIGH in my teflon pans, but can dial it back to only a 4 or 5 in my cast iron pan.
  15. So here's my daily progress so far.... Jan 1 - 174.1 lbs Jan 2 - 174.4 lbs Jan 3 - 173.2 lbs Jan 4 - 172.6 lbs Typical eggs and breakfast meats for meal #1 each day. On January 1, I tried Beef Bacon for the first time. It was good, but not as good as traditional pork bacon. I had a chicken and cream cheese dish on January 1, and overate plus it was late, thus the bump up in weight the next day. January 2 was filet mignon plus some pork rinds and chip dip that needed finished. January 3 was just seasoned ground beef. Plus I have these awesome beef jerky's from Duma's Meats that I occasionally nibble on.
  16. Sounds delicious! I haven't had a fatboy dough pizza since I switched from keto to carnivore. I used to make mine with shredded cheese, egg, and almond flour.

  19. Welcome aboard @Joanna! You're absolutely right. I was like that in my first year, even with something as benign as a blueberry. I don't get the addictive/craving reaction anymore, but at the same time I refuse to eat grains and refined sugar (processed sweets of any kind). I'm still afraid that some candy or some pizza would do me in, lol

Probably because it's New Year's Day, so hopefully tomorrow.   22. Today is the first day of January and is also the first day of World Carnivore Month. To that end, let's challenge ourselves to eat a carnivore diet for the entire month of January. The type of carnivore diet and the level of strictness you choose to do is entirely up to you. Examples of carnivore diets include the following... 1) The Lion Diet. A person eating the Lion Diet only consumes the flesh of ruminant animals, water, and salt. 2) The BBBE Diet. BBBE is an acronym for Beef, Butter, Bacon, and Eggs. 3) The Carnivore Diet. This allows for the consumption of any and all animals and animal by-products, including dairy. In any of the above examples, the object of course is to not consume any plants as part of your diet. Of course, we're not going to micromanage hoe you prepare your food, so your use of seasonings is entirely your own personal choice. IF your circumstances don't allow you to go full on carnivore in January, then you can participate in this topic by challenge yourself to do better, above and beyond what you have been doing. For example, if you have still been eating grains, seed oils, refined sugar, or drinking alcohol, challenge yourself to avoid these items and just eat a clean, single ingredient whole foods diet such as clean keto, ketovore, or animal based. We encourage you to check in daily, and share what you have eaten, perhaps a weigh-in if you're willing, and enjoy in some small talk. Participants in this topic will be entered into a drawing for a prize at the end of the month.
  23. I haven't supplemented with iodine yet, but I've been meaning to. Word is that if you live by the ocean and eat a lot of seafood, you probably get all that you need. But most people are deficient, to the extent that mainstream salt here is "iodized". J. Crow's Lugol's Iodine Solution is a popular supplement among carnivores. Dr. Berry often recommends it.
  24. My wife made a dish in the crock pot that had chicken broth, melted cream cheese, shredded chicken, and more. It was a bit thick, almost like a dip or spread. We put it in a bowl with some shredded cheese and I ate it with pork rinds. It was pretty delicious and still carnivore, save for whatever seasonings she used.
