I'm not a big fan of eggs. To lesson the taste and boost my nutrition; I mix 2 scoops of unflavored collagen into two eggs and cook in either bacon fat, or a lot of butter. It gets really fluffy and kind of crunchy.

The most common way I make them is to just crack them open over a skillet. I usually cook them a little longer so they're "over medium".

I had to go back up and look at the poll results to remember what I had voted on. I should probably remove my vote for hard boiled. I'm just tired of hard boiled eggs at this point, lol.

Today I mashed butter into hot hard boiled yolks. I saw Courtney, on M.E. Lion/YouTube recommends this because it tastes and feels like mashed potatoes. I boiled eggs this morning just to have on hand and some were cracked open so I thought, why not? It was soooo so good!

I did something similar to that once where I chopped up some hard boiled eggs and mixed in some softened butter and it was tasty.

My favorite way of doing eggs is Popeyes

When I am in the mood. For bread. You make a whole in the slice. And crack the egg. Put in middle. Fry it. Turn it over . Or leave it till it's Sunny side up. 

Most the time it's either poached or light fry with olive oil. With smashed avocado and tomato.

At the moment we have an egg shortage and cream none in the supermarket.

I'm sure that's delicious. But for the sake of having success on your health journey you're going to want to nix the bread. 😉

This part we can let slide, but for maximum benefit you may want to work towards removing the plants. The lectins in the tomato or the oxylate in the avocado could be triggering symptoms behind any realized or developing chronic illnesses.

At the same time they could be completely harmless for you. But the only way to know for sure is elimination (at least 30, preferably 90 days), documenting how you feel, and then reintroducing it one at a time, also documenting how you feel.

When making scrambled eggs I like to prepare them "Gordan Ramsey" style. I don't care for the person but I do like the way he make his scrambled eggs 😁. I didn't see pickled eggs on the choices. I do like to make those also and I usually keep a jar of those in the fridge. Very handy to have on hand for a quick meal.

My mom would make those for me as a kid. She called them "eggs in a frame". This was in the 1960's and the bread was some type of Wonder bread or something equally as bad.

I usually have some pickled quail eggs in the fridge. Great little snacks.

    • "Marching into March with Much Motivation"

      For this months challenge, we are going to support each other in our efforts to get up and move. Spring is in the air. The weather is getting better. Get out there and MOVE! Go for walks, hike some trails if they aren't too muddy. Or just make a goal to get on the treadmill or lift some weights more than usual throughout the month. Get in the habit now, and we just might have beach bodies when summer officially hits, lol. 

       

      Just like before, we encourage you to check in daily, and share what you have eaten, perhaps a weigh-in if you're willing, and enjoy in some small talk.

    • Today is February 1st and marks the first day of "National Fasting February" - and yes, this is a thing. Google it!

      For this month's challenge, we are going to support each other in our efforts to practice various forms of fasting throughout the month. The type of fasting you wish to do is entirely up to you. We are going to encourage INTERMITTENT FASTING, that is to put it simply, skipping a meal so that you are only eating 2 meals a day instead of the traditional 3 meals a day. The goal is to enjoy these meals within an 8 hour "feasting window" and then no food in the remaining 16 hours "fasting window" (in which 8 of those hours you should be sleeping).

      An example is waking up at 7am, but waiting until 11am-noon for your first meal, and then having dinner at 6-7pm for your 2nd meal. Other people prefer to eat a breakfast, then a mid-day lunch, and skip dinner. 

      If you want to throw in a 24, 48, or 72 hour fast just to show off by all mean do so, lol.
