velveta. Wow! There is so much crap in that stuff

I've always hated Velveta cheese.

Last night I had a 20oz NY Strip. Tonight was a couple Wagyu burgers (about 2/3 lb total) with some over easy eggs on top with both swiss and sharp cheddar cheeses. I love this Wagyu burger from Sam's Club. It's so good I want to cook some for all of you, lol 😄

I bought a pack of Wagyu beef last night for tacos tomorrow

They cost me $5.88/lb, which is still probably better than normal ground beef at the local grocery store...

Before I made up my mind to buy it I priced the regular ground beef 🥩 and actually it was about the same for me, I only needed one pack from Wally World

I made my first batch of chaffles using almond flour and coconut flour, using egg rings in a frying pan. They were ok, but not carnivore so I eventually got off my butt and turned the chicken breasts I’d bought into carnivore flour. It took a couple of hours, but was worth it because I made a lot and it’s staying like powder in the freezer so will last a long time.

For breakfast this morning I had some of the new and improved chaffles with butter, salmon and grated cheese.

Now I have a proper waffle maker ordered and will be making them in bulk for breakfasts from now on.

How do you make chicken flour and what does it taste like?

Some foods I never tire of or can lean on pretty consistently without issue… scrambled eggs and lots of butter and grilled bone in skin on chicken - I love salty crispy chicken skin!

my life is so much easier eating this way, for my lunch I just packed these up in a stainless steel container and cook at work (I am a professional childcare provider) since I have access to the kitchen. I pop these into the toaster oven and by the time I have a toddler asleep they are ready for me to eat. Not to mention this is very affordable. I buy big packs and portion into 4-5 pieces to reseal and freeze. Since it is not nearly enough fat, I do make sure to eat more butter with chicken - I do still log food to make sure I eat enough in general but also aim for around 70%fat 30%protein as I feel best at this range.

Anyone else love chicken?!

I know that I am not eating enough but I can’t I gag and upheave, I don’t like that feeling.

If you need meal ideas and clever ways to make your food, this is one of the many influencers on YouTube. If I'm not mistaken, she's been on the carnivore diet for 5 years or so.

Yes I like her, simple and to the basics, she is strict carnivore.

The Recipe I used

I hope that link works.
It has a very mild taste and I can’t even detect it in the chaffles, I guess it depends on how much you use. I like to add a flour like ingredient because it changes the texture and makes it more like bread or waffles, rather than an omelette texture.

I just finished a grill session and ended up with some bacon-wrapped pork loins, wagyu patties, paper-thin chuck steaks, and another batch of pork belly burnt ends.  😋

Three over easy eggs on top of three chaffles along with a couple of slices of bacon for my first meal.

Then this evening I made a couple of liverwurst sandwiches using chaffles and my homemade liverwurst. Then for a little dessert I had a little homemade yogurt.

Can this be tweaked?

Okay here we go!
Keto cornbread.  It’s turned out supper yummy. Yep, I flipped it over 🤷🏼‍♀️ the top was darker than I wanted
1 1/4 c almond flour
3/4 c shredded cheese. (Ain’t gonna lie. I was closer to a cup!)
4tbs melted butter
1 lg egg
1 small can jalapeños
1/4 c sour cream
Dash of salt. (I used half teaspoon)
Butter the baking dish or use non stick spray!!
I was making regular cornbread for the family, so I cooked it at 400°
I recommend 350° for 30 ish min until a toothpick comes out clean.
Also, I was thinking that if you omit the cheese and jalapeños, you could add a 3/4 cup of erythritol or another keto approved sweetener, and cook it in a cast iron.  I would put a stick of butter in the cast iron and heat it in the oven while it’s pre heating.
When it’s done, smother it in butter and a dab of sugar free maple syrup. 😋 that will be my next adventure

In what way? To make it more carnivore you would replace the almond flour with probably a meat flour of some kind. There are carnivore "bread" recipes out there that I have never made myself yet, but would use that as a starting point.

To keep it keto but make it more sweet (i.e. "dirty keto") then try the erythritol suggestion. But since erythritol can have consequences, maybe another sweetener like allulose instead. But I wouldn't treat myself to this often. True keto is clean eating, and supposed to teach you to live without sweets and bakery type goods.

So far, I've only made burnt ends out of it. The recipe says to cut them into appox 1" cubes. Cover them (similar to what you do when you bread something for deep frying or pan frying) with your favorite meat rub. Then it says to bake them for 2 hours at 250 F. When I bake mine, I put them in my pellet grill so they not only bake but get a generous dose of smoke on them. There is another step that I don't do as it calls for  drenching the ends in a BBQ sauce glaze and letting them cook for another hour (covered). But there are too many devils in all the BBQ sauce I've seen to do that step.

As far as the pork belly at Kroger, I don't know as we don't have Kroger's in my part of the country. I got this particular pork belly at Walmart. It comes unfrozen in a tray that has 5 or 6 fat strips. I have since found whole slabs of pork belly at the commissary here on base (unfrozen).

I would guess that the frozen stuff would be okay depending if it is an entire slab or what. Someone else might be able to better answer that one.

my main meat is grounded beef.

That's a good start and it's easy to make it into many different things. But there's a world of meat out there and depending on your level of carnivore you're doing, there are a lot of spices that have no carbs or sugar in them that you could use.

You can always check YouTube for carnivore recipes to expand your variety of meals. Lots of ideas available to try and alter to your liking.

I am pretty new to this stuff, so my main meat is grounded beef.

That's fine. Beef is basically our staple food and is amazingly nutrient dense. In fact, some even do what's called "The Lion Diet" where they eat nothing at all but beef.

Yes, but i want to eat pork, chicken and fish aswell, but i am on a tight budget, so "steaks" are crazy expensive here in the Netherlands, i can get ground beef 1 pound for about €5-6 ($5.5 to $6.6 dollar) from a local butcher, for comparison ribeye 1 pound costs about 15-20 ($16.5-$22)

I'm not sure how relevant this video is, but you can give it a try. Dr. Ken Berry offers alternatives to expensive meats. Hopefully, you can find similar deals in the Netherlands.
