I do not have a gallbladder either. Removed in 1983 at the age of 22. My doctor at the time thought it was strange for someone so young. After the removal I dealt with diarrhea after eating greasy foods. That lasted for several years and then slowly went away. now my digestion seems to work just fine. Never constipated on Carnivore. Make sure you are getting plenty of animal fat, plus magnesium. Magnesium citrate will work for sure. I will say I was a little backed up about 3 weeks ago BUT that was do to my consumption of some cough syrup and about a dozen sugar free cough drops over a 3 day period. After I dropped the meds everything went back to normal. I found that strange how cough meds affected my system now being a carnivore.

Oh I’m a big time fat eater and I did the magnesium citrate route and it definitely helped but the consistency of the stools were like peanut butter. Not pleasant at all.
I switched to a magnesium complex and it was what worked best for me. After about a year everything straitened itself out and I don’t have to take anything any more.
Occasionally I’ll get a hard stool but it generally passes easy enough.

It's easy to jump to the conclusion that red meat might be the problem, because it is rich in iron, and ferritin is the protein that stores iron. However, you can actually have high ferritin and low iron, so the relationship isn't always a direct relationship.

There are really two main causes of high ferritin levels:

1) Absorbing more than normal (hereditary hemochromatosis).

2) A reactionary response to inflammation such as: metabolic syndrome (obesity, diabetes), liver disease, daily alcohol, infections, cancers like Hodgkin’s lymphoma and leukemia, rheumatoid arthritis and systemic lupus erythematosus).

I think you and your doctor are going to have to do a little more digging. Check your liver, your inflammation markers, and more. 

In the meantime, replacing red meat with some seafood and chicken is just fine. You may need to use more butter or other animal fats though to acheive lasting satiety.

24 hour dry brined Pseudo ribeyes for lunch today. I just cut a rump roast in half for 2 nice 2" thick steaks. Not as tender as ribeye but very tasty.
